The margarita is synonymous with everything south of the border. It usually contains some combination of tequila, lime juice and Cointreau or Triple Sec. This drink comes blended or on the rocks, usually in a glass with a salted rim—it is the ideal combination of sweet, salty, sour and bitter.

If you need another excuse to enjoy one – Monday is National Margarita Day. Sip your way to happiness and celebrate the best holiday known to bar goers everywhere.

Diego Fernandez, the operating partner at El Cholo Pasadena, explains that the margarita is the perfect compliment to spicy foods. Coming from someone who oversees more than 1,500 margaritas per week – his pairing suggestions should not be taken lightly.

“Pair it with classic nachos and you’re in heaven – the margarita has the perfect combination of citrus (lime), sweet and sour,” he said.

Since El Cholo started making margaritas in 1967, they have become one of the largest buyer of Jose Cuervo tequila. They use Jose Cuervo, Patron, Cuantro and Triple Sec in their margaritas to lend a distinctive flavor. Each margarita is made with a base of freshly prepared sweet and sour mixture and can be made blended or on the rocks.

Try the margarita flight for a little taste of everything or order the L.A Lemonade with 1800, Sauza Conmemorativo, Herradura Silver and Cointreau if you’re feeling like a true Californian. Save the 24 Karat – Jose Cuervo’s Reserva de la Familia and Grand Marnier Cent Cinquantenaire for a special occasion – this pricey margarita is worth it’s weight in gold.

Although everyone has different ways of drinking it, Fernandez, notes that margaritas on the rocks have become more popular recently. For him, a salted rim and squeeze of lime complete the drink.
