Wine Down This Summer

Summer is the perfect time to cool down with a glass of wine and enjoy the summer weather. The Royce Wood-Fired Steakhouse, at the Langham Huntington Hotel, is making it easier to enjoy great wine and fine food with their new Monthly Wine Dinners.

We spoke to Dylan Torcoletti, Assistant Manager of The Royce Wood-Fired Steakhouse, to get some tips on how to sip in style this summer. Torcoletti explains that they start with the cuisine and build the wine program around the chef’s flavors.

When pairing wine and food at home, Torcoletti has a few suggestions.

“We like to consider the weight of the wine to be a factor in pairing – matching or contrasting intensities. Acid level is also important, especially with white wines or rose wines – a bright sauce can be complemented by a crisp wine; conversely, a richer sauce, such as truffle cream, can be contrasted by a wine with higher acidity,” he said.

Even if you’re relatively new to wine, it’s never too late to channel your inner sommelier. Now is the time to try wines from different regions and varietals. Torcoletti suggests reaching for wines that may not be the trendiest because you may discover a new, unexpected favorite.

For summer sipping, Torcoletti recommends “crisp whites and dryer-style roses, as they can be refreshing and translate well from the patio to the dinner table” and wines lower in alcohol, like Muscadet. “Roses from southern France such as Bandol are tremendous values,” he adds.
