Take a culinary journey with Sushi Roku’s new East Meets West menu. This artful take on Japanese food combines well-balanced tastes, delectably fresh fish and surprising flavors.

Something as simple as the brussel sprout chips will leave an impression. These crispy truffle oil and salt veggies chips will make a greens lover out of anyone – they’re perfect to pair with Golden Road’s Wolf Pup IPA on tap. This hoppy, bright beer is an ideal companion to lighter foods and delicate flavors.

The Tuna Tartar Phyllo Cups are the first example of East meets West – they take traditional tuna tartar but add bright yuzu guacamole and a finely sliced piece of soy truffle. They come in buttery phyllo cups. These one-bite appetizers are satisfying but you’ll still have room left for your main course.

For a more substantial snack try the Fried Calamari with charred jalapeno glaze and winty sprouts. These tender bites have a crunchy coating and flavorful finish. The calamari is a cut above the rest and it’s tempting to make a meal out of these crispy bites.

Order a Burnt Sugar Old Fashioned which features Knob Creek Bourbon, orange bitters and Angostura. This smoky drink offsets the lighter flavors on the menu like the delicate Sea Bream White Fish Sashimi. This tender sashimi marries the spice of with sliced jalapenos with the buttery fish and a hint of lime vinaigrette with ume furikake.

The two stunning examples of East meets West fusion are the Seabass Slider and Wagyu slider. These sliders are piled high with toppings and pack a surprising amount of flavor into each bite. The Wagyu slider includes Camembert, crispy shiitakes, onions and truffle mayo in a crispy bun with with sesame seeds. The true standout is the flaky panko crusted sea bass with a layer of crispy red cabbage and tonkatsu tartar served on crispy bread.

For an equally adventurous take on sushi, order the Yellowtail Diced Chiles Roll with seared yellowtail, popcorn shrimp and jalapenos. This roll combines two popular appetizers – the yellowtail and popcorn shrimp – and is specific to Pasadena.

For dessert, the Matcha Butter Cake combines a western style fluffy cake with string matcha green tea powder. The pillowy cake is served with a scoop of vanilla ice cream.
