Restaurant: East Meets West in Perry’s Lively Menu by Chef Claud Beltran

Chef Claud Beltran has another reason to smile with the opening of Perry’s in the dusitD2 Hotel Constance. The menu and concept are all his in this East meets West inspired restaurant.

“It’s Asian fusion inspired California-style food,” said Chef Claud, “it has influences from all of Asia: Thailand, China, Vietnam, Korea.”

“[The menu] is a little more on the Eastern side,” he added.

With indoor and outdoor seating, Perry’s occupies a comfortable space inside the lobby of the hotel. There’s also seating in a type of indoor patio for those who can’t decide whether to sit inside or out. We sat inside at one of the marble tables with cushy chairs.

We began our meal with a glass of wine from the restaurants wine list. “The wine list has about 10 whites and 10 reds by the glass. Most are domestic,” said Chef Claud.

I ordered the JCB Pinot Noir Rose and my companion a glass of Vega Sindoa Cabernet. The Rose was perfect for a summer day with raspberry, vanilla and spice flavors, while the Cabernet tasted of earth and spice.

A plate of paper-thin Octopus Carpaccio was topped with miso vinaigrette, jalapeno, grapefruit and wild arugula. The octopus was tender and the perfect foil for the spicy jalapeno, peppery arugula and savory miso vinaigrette.

Crunchy crostini were adorned with a lively mixture of crab and egg in the Chili Crab dish. A juxtaposition between a crab and egg salad the Chili Crab was mixed with Sambal, pickled cucumber and coriander for a spicy-tart bite.

Our next dish was a favorite of mine; Duck Spring Rolls. Crispy won ton skins were filled with savory shredded duck done char siu style. A hoisin-based dipping sauce accompanied the egg rolls. Sweet and savory the egg rolls were delightful. I can imagine sitting in the bar during happy hour and enjoying these delicious morsels with a glass of wine.

A bowl of musky Japanese eggplant topped a bowl of house-made rice cake noodles. Everything was seasoned with soy sauce, shishito peppers, Thai basil and crispy shallots. I know a lot of people don’t like eggplant because they find it bitter, but trust me on this Japanese eggplant does not have that problem, it’s delicious as was this dish.

The Kale salad was a take on the traditional Caesar. It was filled with red and baby kale, watermelon radishes and croutons and was dressed with a tart Kimchee Caesar dressing and topped with shaved Parmesan. You can’t get more East meets West than this salad.

A rainbow of crunchy carrots topped green papaya in the next salad. Tart and crunchy, the salad was dressed with nuoc cham (Vietnamese fish sauce) and Thai chili. Added crunch was provided by peanuts, cilantro, taro and mint. This was a refreshing salad with a myriad of flavors.

I’m a big curry fan and the Assam Salmon Curry hit it just right. The curry had the right notes of spicy, creamy and sweet. The salmon sat atop a bed of delicate Jasmine rice and sauteed Japanese eggplant and was dotted with fresh herbs. The Chef de Cuisine told me that this dish could be made Vegan since the curry sauce has no dairy.

The Flat Iron Bibimbap featured tender strips of beef, mixed grains, sesame, bean sprouts, carrots, zucchini, shiitake mushrooms, gochujang (Korean hot sauce), fried egg and kimchee. It comes very compartmental with each ingredient in its own space but its not meant to be eaten that way. Mix it all up, jumble those ingredients so each bite features a little bit of everything. Its a little bit on the spicy side but only enough to make it interesting.

Of course we couldn’t leave without dessert. A bowl of delicate donuts (beignets) made from buttery brioche dough with a touch of miso were thickly coated with sugar, they sat on a pool of matcha (green tea) cream. Served warm and fresh from the fryer, these little gems were delicious.

Perry’s Restaurant is a haven of good food and great service in a casual yet elegant setting.
