Taste ‘Grand Budapest Hotel’s’ Au Chocolat at Pasadena’s Little Flower Candy

The three-layered courtesans au chocolat dessert featured in the 2014 film “The Grand Budapest Hotel” comes to life with its own version at Pasadena-based Little Flower Candy Co.

Little Flower pastry chef Cecilia Leung recreated the colorful dessert which will be available to the store’s customers in the coming weeks, the LA Weekly reported.

The pastry plays an important role in the film, being sold at its fictional Mendl’s Bakery. The movie was directed by Wes Anderson starring Ralph Fiennes.

According to the “Learn How to Make Your Own Courtesan” video posted on the official website of “The Grand Budapest Hotel,” the pastry is made up of butter, eggs, salt, sugar, flour, cocoa powder and whole milk.

The bottom and second layers of the pastry should be filled with a cream patisserie of chocolate, egg yolks and sugar.

The dessert is seasoned with a glaze of confectioner’s sugar, a dash of vanilla and milk. Food color should also be added to the three layers–one lavender, one pale green and one pink.

Decorating the courtesan with filigree of white chocolate, icing and small butter cream are the last steps in recreating the film’s famous dessert.
