Waldorf High School’s Culinary Arts Class Make Chiles en Nogada



Buen provecho! (Bon Appetite!) Students in Waldorf High School Culinary Arts elective class made chiles en nogada—widely considered the national dish of Mexico. With ripe poblano chiles, fresh and dried fruit in the picadillo, a walnut-based sauce, and pomegranate seeds from the McComb Mendocino garden as garnish, the dish makes the most of the late summer bounty in central Mexico’s markets.
