The restaurant is named after Stephen W. Royce, the longtime owner and general manager of The Huntington Hotel who served beginning in the 1920s and continued until his retirement in 1969. Chef de Cuisine Jorge Delgado, a graduate of Le Cordon Bleu and Pasadena City College, leads the culinary team. His cuisine is “primarily rooted in Latin American, Mediterranean and Asian flavors.”
The restaurant features prime cuts, Australian wagyu, and grass-fed beef prepared over an Aztec wood-fired grill with white oak. The Royce maintains an award-winning wine program and received the Wine Spectator Best of Award of Excellence in 2021 and 2022.
