Tony Auer, owner of Derek’s Bistro, that quaint hideway recently honored by OpenTable as one of the Top Ten Outstanding Restaurants in Los Angeles and Orange Counties, has announced the appointment of James Lambrinos as his new Executive Chef.

“Chef Lambrinos comes to us from Eugene in New York City.  He is known for his American and French food seasoned with subtle international influences,” Auer said.

Chef Lambrinos is trained in both the creative and business side of the restaurant profession.  He studied restaurant and hotel management before graduating from the Culinary Institute of America.  From there, he went to work at some of New York City’s most highly regarded eateries, including The Carlyle, Cena, J Boulé, and Eugene, where he perfected his cosmopolitan style.

At Derek’s Bistro, Chef Lambrinos chooses to keep his creations inventive without ostentation.  “I prefer to keep my dishes focused, distinct, and full of fresh flavors,” he says. “I enjoy creating dishes that are delicate, intricate, and appealing to the eye.”
