Haven Gastropub +Brewery is set to open its doors mid-November 2011 in Old Pasadena, introducing the Los Angeles community to its innovative take on gourmet, seasonal comfort food and the restaurant collection’s first foray into on-site brewing.

The second iteration of the Haven Gastropub brand, from Executive Chef Greg Daniels, Beverage Director Wil Dee, and Brewmaster David Larsen, is fueled by the success of the two-year old flagship location, Haven Gastropub, in Old Towne Orange, named “Best New Gastropub 2010” by Draft magazine.

The restaurant will serve lunch, dinner, and late-night menus to complement the extensive beverage program and on-site brewery, including global varietals of over 50 beers and wine on tap in addition to a comprehensive bottle list.

Haven Collective Partners Ace Patel, Daniels, and Dee designed Haven Gastropub +Brewery to be a neighborhood gathering spot, with old-world style and warmth that encapsulates and improves upon the inherent concept of a “gastropub” – providing guests refined and inventive, yet casual cuisine alongside house-crafted brews.

Daniels’ classic takes on European cuisine with a modern American twist is showcased by an adventurous menu featuring farmers’ markets specials, house-made charcuterie, flatbreads, and entrées inspired by California locality and seasonality. Some sure-to-be favorites include Goose Pastrami Sandwich with Cole Slaw, Russian Dressing, Housemade Mustard, Artisan Rye Bread, and Seasonal Pickled Vegetables; Hiramasa Crudo with Ruby Red Grapefruit, Fresno Chili, Pickled Shallot, Micro Peppercress, Pink Salt, and Arbequina Oil; Duck Proscuitto Flatbread with Leek Jam, Point Reyes Bleu Cheese, and Arugula; Grilled Octopus with Caramelized Fennel and Hearts Of Palm, Yellow Tomato Confit, and Citrus Aioli; and a Duo of Quail with Pan Roasted Quail, House-made Quail Sausage, Hen Of The Woods Mushrooms, Butternut Squash Puree, and Black Mission Fig Jam.

As a part of the beverage program, Haven Gastropub +Brewery houses its own on-site brewery under the supervision of Brewmaster David Larsen in collaboration with Chef Daniels. Larsen, who began as a sous-chef at the first Haven Gastropub, is steadfast in his attention and dedication to refining both classic recipes and introducing the restaurant’s clientele to nouveau varietals.

The brewery will produce Haven’s uniquely crafted beers, featuring year-round brews and small-batch seasonal offerings in a rotating selection of five varieties, such as Imperial Stout, Bavarian-Style Hefeweizen, and IPA. Haven Collective plans to produce 2,000 barrels of beer in its first year.

The restaurant also boasts a full bar selection of uncommon spirits including Hayman’s Old Tom Gin, Michter’s Straight Rye, and Carpano Antica Formula, used to craft unique takes on pre-prohibition cocktails priced at $10-12, such as The Aviation, made with Bols Genever Gin, Luxardo Maraschino Liqueur, and Crème De Violette Liqueur; and the Walnut Manhattan, combining Buffalo Trace, Carpano Antica, and Walnut Liqueur.

Additionally, Dee has curated a global beer and wine list to complement Daniels’ cuisine and the Haven philosophy of supporting craft businesses. Haven Gastropub +Brewery serves an expansive, rotating selection of 44 draft beers in addition to more than 100 bottled craft beers from local, national, and international breweries ranging from $6-$160, including domestic favorites Goose Island Matilda from Chicago, and Bruery Saison Rue from Placentia, in addition to rare, special anniversary selections and international beers such as Scotland-based BrewDog. The bar’s 52 taps will include four of the brewery’s own special beers, four cask ales, and eight wine varietals served by the keg.

Haven Gastropub +Brewery will display similar design elements to those created by Haven Collective for its sister location, with leather booths, distressed wood tables, and rustic candlelit wrought-iron chandeliers, keeping intact the buildings historical barrel roof dating back to the 1920s. The 7,500-square-foot space features a showcase kitchen and particular attention to vintage details as well as modern comforts, as exemplified by the restaurant’s up-to-date virtual charts at the bar, alerting in-house and online visitors to the current selection of available beers in real-time.

Guests can enjoy the Haven experience at mid-level tables and intimate booths in the 170-seat dining room or in one of the 52-seats in the bar and lounge area. Haven Gastropub +Brewery also boasts a 12-seat private dining room perfect for special occasions and events. The only access to the restaurant’s vast wine room features a gas fireplace, custom light-fixtures and furniture, a salvaged wood table with antique metal accents, and a 3D HDTV with full A/V integration.

Haven Gastropub +Brewery will be llocated at 42 De Lacey Ave., Pasadena. The restaurant will serve lunch, dinner, and a late-night menu consecutively from 11:00 a.m.-2:00 a.m. seven days a week.
